Today I am sharing a Valentines Day Breakfast with you – not too rich, as we are not really big on breakfasts, but seeing as this is for a special day …

I decided to make large Mixed Berry Muffins and these cups were just right – it kept the shape 100% and most important, were big enough for my muffins without baking over the sides.

But, you want the recipe as well, right..?  Here we go !

Mixed Berry Muffins

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 6 Large OR 12 Small Muffins

Mixed Berry Muffins

Ingredients

  • 2 cups Self-Raising Flour
  • 1 t Baking Powder
  • 1/2 cup Caster Sugar
  • 1 Egg
  • 175ml Milk
  • 1/2 cup Butter, melted and cooled
  • 1 1/4 cups Fresh Raspberries and Blueberries

Directions

  1. Pre-Heat the oven to 190 deg C (375 deg F) - line a muffin pan with 6 large or 12 small cups or liners.
  2. Sift together the Flour, Baking Powder and Caster Sugar in a medium mixing bowl.
  3. Beat together the Egg, Milk and melted Butter - add to the dry ingredients and stir until just mixed {do not over mix}
  4. Fold in the Berries - divide the batter between the cupcake cups or liners.
  5. Bake 20 - 25 minutes until risen and golden brown - transfer to a cooling rack.

I found this little gadget, Heart of Love Sandwich Mold so adorable and if I still had kids at school, I would probably have packed them lunches cut by this item, also from Wholeport.Com,for all the days before and after Valentines Day ! You can fill the bread with just about anything – from a blob of Nutella, to Strawberry Jam, or make a savory filling as I did.

My filling consisted of an Omelette, a slice or two of Cheese, some Ham and a few Spinach leaves —- all cut/torn into tiny pieces to fit onto {and into} the little shapes of the Heart Of Love Sandwich Mold

These Red Heart Cupcake Liners are definitely not only for use as … well, cupcake liners ! I used the ones I received from Wholeport.com to hold cupcake plastic clear tops, which I filled with a selection of Fresh Fruit and a delicious thick and creamy Coconut Chocolate Dip – see recipe :

Coconut & Chocolate Dip

Coconut & Chocolate Dip

Ingredients

  • 1/2 cup Coconut Cream
  • 125g Chocolate, good quality, broken into pieces
  • 1/2 t Coconut Essence
  • Fresh Fruit, to dip

Directions

  1. Heat the Coconut Cream over medium heat until just starting to boil.
  2. Remove from the heat and stir in the Chocolate - stir until melted.
  3. Add the Coconut Essence and stir until combined.
  4. Transfer to a serving bowl and serve with the Fresh Fruit at room temperature.

Lovely little bags, aren’t they! The above photo was the only decent one I could get, as the wind started blowing and well, there my garland was all over the show – all I did to the garland was to use 6 Heart Shaped Paper Doilies , painted the letters A.L.W.A.Y.S. in pink on each and threaded through some more stringValentines Day Breakfast ~ Recipes and Decorations !  #ValentinesDay #ValentinesBreakfast #Decorations #BreakfastAnd thanks to Wholeport.Com I was able to share all this with you today.

  5. So much to munch on here Linda! I must comment on your muffin method, brilliant lining the muffin pan with foil and then inserting the hard muffin cups! I must try that asap! I also love how you’ve used all the heart doilies with the pretty pink ribbon. You table looks fabulous!!
